You shouldn’t deprive yourself of a home cooked meal when your staying with KT Cabins. All of our gorgeous cabin rentals have a fully equipped kitchen to create the perfect home away from home. The only thing holding you back from becoming the vacation chef you were meant to be is the probably the cleanup. But have no fear, brilliant one-pan recipes are here to save the day. Oh yes, one pan recipes are the answer to having an amazing home cooked meal with very little clean up. Here are a few of my favorite one pan recipes to make on while traveling or just when I don’t want to do a lot of dishes….

Pan-Roasted Chicken and Vegetables (from Taste of Home)

This one is super simple and has amazing flavor. I make this one at least once a week and swap out different veggies and seasonings depending on the season. This recipe makes 6 servings. Ingredients: 6 medium red potatoes, 1 large onion, 2 tbs olive oil, 3 garlic cloves, 1-1/4 tsp salt, 1 tsp rosemary, ¾ tsp pepper, ½ tsp paprika, 6 bone-in chicken thighs (skin removed and at room temperature).

Step 1. Preheat oven to 425°. Line a large baking pan with non-stick foil.

Step 2. While the oven is preheating, chop up the potatoes (3/4 inch pieces), onion (coarsely chopped) & garlic and combine them together in a large  bowl. Then add ¾ tsp salt, ½ tsp rosemary, and ½ tsp pepper. Toss everything together really well to make sure every bit is coated. Then transfer to your baking pan, spreading out evenly. Put the pan in the oven for 10 min.

Step 3. Mix together the paprika, remaining salt, rosemary, and pepper. Sprinkle the mixture over the chicken then arrange over vegetables.

Step 4. Put the pan back in the oven for about 35-40 minutes (or until chicken is fully cooked)

Step 5. Enjoy your delicious meal.

Sweet & Tangy Salmon w/ Green Beans (from Taste of Home)

When I’m on vacation, I want a fancy meal without the fancy price. I would rather spend my money on ridiculous knickknacks and activities. This salmon recipe is the perfect meal to make me feel classy with no regrets. This recipe makes 4 servings. You will need: 4 salmon fillets (about 6 oz each), 1 tbs butter, 2 tbs brown sugar, 2 tbs soy sauce, 2 tbs Dijon mustard, 1 tbs olive oil, ½ tsp pepper, 1/8 tsp salt, 1 lb fresh green beans (trimmed).

Step 1. Preheat oven to 425°.

Step 2. Line baking sheet with non-stick foil. In a small bowl, melt butter in microwave (10 sec intervals until melted). Then stir in brown sugar, soy sauce, mustard, oil, pepper and salt.

Step 3. Place salmon on backing sheet and brush on half of the butter mixture.

Step 4. Arrange green beans around salmon and drizzle with remaining butter mixture. Then roast in oven 14-16 minutes or until the fish begins to flake easily with a food.

Step 5. Dive into a classy delicious meal.

Cheesy Stuffed Baked Potatoes with optional Baked Bacon

If the weather is chilly outside or it’s just not been a good day, nothing cheers me up better than cheesy potatoes. Discovering the magic that is baked bacon changed everything and added to this delicious cheesy stuffed baked potato recipe from taste of home is just amazing. It’s that perfect comfort meal that’s easy to make and has very little clean up. This recipe makes 6 servings. You will need: 3 large baking potatoes (1lb each)  ½ cup butter (cubed & divided), ½ cup half&half cream, ½ cup sour cream, 1 tsp salt, ½ tsp pepper, 1 cup shredded cheddar cheese. 2 lbs bacon (optional).

Step 1. Preheat oven to 400°. Line a baking sheet with non-stick foil and arrange potatoes on the pan and bake for 50-75 minutes or until tender. When cool enough to handle cut each potato in half lengthwise and scoop out the pulp, leaving a thin shell and set aside.

Step 2. In a large bowl, mash potato pulp and stir in half&half cream, sour cream, cheese, and salt & pepper. Then stuff into potato shells. From here you can simply put the potatoes back in the oven for about 15 minutes (or until heated through) and be done. Or if you want to bake up some bacon with it, here is what you do…

Step 3. After stuffing your potatoes arrange on one side of the pan and lay out your bacon strips on the other side. The bacon can be close together, but don’t let if overlap. Then put the pan in the oven to back for 15-20 minutes (depending on the thickness of the bacon). Check it after 10 minutes and let cook until your desired crispness.

Step 4. Enjoy the delicious smell of bacon before digging in to one of the best comfort meals.

These recipes are really easy to customize with what ever vegetables you want or even make vegetarian and vegan versions of. All the ingredients can be used in other quick-fix meals, so nothing gets wasted while on your trip. Come back to our little corner of the internet any time.
